It’s been a while since I shared a cake recipe with you all. And judging by how many birthdays coming up over the next few weeks now seems a perfect time to share this lovely Chocolate Cake with Raspberry Buttercream.
Birthdays always remind me of when I worked for a large organisation. As with lots of companies, it was normal to bring in treats for everyone on your birthday. Most people would pick up doughnuts and other delights from the supermarket on the way into work, but there were some colleagues who went the extra mile. They’d bring in the most amazing selection of home baked muffins, cupcakes, and delicious cakes. As you can imagine we all looked forward to these colleagues birthdays the most.
I discovered this delicious chocolate cake on baking a moment, a wonderful food blog featuring a selection of lovely pastry, and desserts from a former pastry chef.
The moist chocolate sponge layers filled with a sweet raspberry meringue filling is my idea of the perfect birthday cake. Topped with raspberry Swiss meringue buttercream, this pretty pink cake is perfect for summer birthday celebrations.
